Tofu Fingers

                    TOFU FINGERS

Give these Tofu Fingers a go... crispy tofu with garlic flavour coated in a golden bread crumbs dipped in honey mustard sauce. This crispy tofu recipe has been in our family for years and are a favourite to everyone who tries them, they are the perfect finger food and can also be served as a side dish for a meal.

Easy to make with simple ingredients...I take pieces of tofu cut into strips and roll them in flour before dipping in egg, followed by breadcrumbs. Then fry them until golden and crispy. Serve the tofu with no fuss honey mustard sauce made with only 3 ingredients; mayo, dijon mustard and honey. You can also serve them with ketchup or your favourite dipping sauce.

Hope you enjoy this simple recipe as much as we do. So roll up your sleeves and let's get cooking!

INGREDIENTS

- 5 firm tofu ( cut into approximately 2cm thick)

- 1/2 tsp white pepper powder

- 4 clove garlic (minced) or 1 tsp garlic powder

- 1 cup regular breadcrumbs or panko breadcrumbs ( you may need extra)

- 1/2 cup all purpose flour ( you may need extra)

- 1 large egg ( lightly beaten)

- salt

- oil for frying

METHOD

- Cut the tofu into stripes. Mix together salt and pepper. Allow to marinate for 30 minutes.

- In a large bowl, mix together minced garlic and bread crumbs. Mix until well combined.

- Lightly dust each tofu fingers in flour then dip into eggs so they are completely covered. Immediately dredge the eggs coated tofu in the breadcrumbs mixture, lightly pressing to evenly coated. Continue until all of the tofu is breaded.  The tofu fingers can be left in  the fridge for few hours at this stage.

- In a deep saucepan heat oil, once the oil is slightly hot, add the coated tofu and cook until they turn crispy and golden brown.

- try to avoide turning them too soon or too often, as the crumbs coating is likely to fell off.

- Drain on kitchen towel. Sprinkle some salt.  Serve immediately. Ideally you want to serve the crispy tofu as soon as it's made.

If you are looking for healthier version, you can bake them instead of frying in the oven. I suggest toasting the breadcrumbs before coating with tofu... This is how you can make anything breaded baked beautifully golden all over.Arrange crumbed tofu on the baking sheets. Spray both sides of tofu lightly with oil spray. Bake in an oven heated 180c for 10 to 15 minutes or until crisp.

HONEY MUSTARD SAUCE

- 1/2 cup mayo

- 1/4 cup Dijon mustard

- 1/4 cup honey

Mix well.
