Eggless Chocolate Lava Cake

VEGETARIAN CHOCOLATE LAVA CAKE





Craving for dessert now? Try this lava cake. 
They look fancy on the plate and are really easy to make. From start to finish. It takes only 30 minutes to whip up this 9 ingredients batter.

These romantic and decadent desserts are usually served in restaurants. But I'm telling you the home made version is so much better. When your folk breaks through the
exterior of the cake, the divine luscious liquid oozes out. I'm sure you will fall in love with this recipe.

To make this lava cake, I have used 70% bitter sweet compound chocolate which is meant for baking to get the lava effect. Avoid using chocolate chips or ready to eat chocolate. Use both good quality chocolate and cocoa powder. It makes a huge difference. 

You can make this cake in ramekins, aluminum foil cups or muffin moulds.
Here I'm using muffin moulds. To avoid the cake sticking to the mould,  I have greased the muffin pan with butter and dust with  cocoa powder. Then place cut out round parchment paper inside. This promises an ultra non stick environment for your cake. Run a knife around the edge just to make sure they aren't any spots of cake attached to the mould then use a spoon to release the cakes from the pan and place each cake on a plate.

The baking time will change based on the size of your ramekins or oven . Keep your eyes on them.

While this cakes easily stands alone, they are over the top when served with ice cream, whipped cream or just dusting them with powdered sugar and served with fresh berries.

INGREDIENTS ( yield 6 cakes)

- 1/2 cup all Purpose flour

- 1/2 cup granulated sugar

- 1/4 cup unsweetened cocoa powder

- 1/2 tsp baking powder

- 1/4 tsp baking soda

- 1/4 cup melted butter

- 1 tsp vanilla essence/extract

- 1 tsp coffee powder

- 7 oz milk

- 6 pieces bitter sweet baking chocolate

- Powdered sugar for dusting


METHOD

- Pre heat oven to 180c

- Grease muffin moulds with butter and
  dust with cocoa powder. Place a piece of  
  cut out round parchment paper inside.





- In a bowl whisk in flour, baking powder, 
  baking soda, cocoa powder, coffee powder 
  and sugar.




- Add in melted butter and vanilla essence




- Gradually add milk until better is well 
   combined and smooth.




- Pour the batter into the prepared muffin 
  mould.




- Place a chocolate square in the middle of the batter. With a spoon, lightly press the chocolate they get immersed in the batter.





- Baked in preheated oven for 10 to 13 
  minutes or until the sides of the cake are
  firm but the centre is soft.

- Once baked, allow the cake to cool for 5 
  minutes . Run a knife around the edge.
  Use a spoon to release the cakes from the
  pan. Place each cakes on a plate.

- Sift  powdered sugar on top and 
  garnish with berries if desired.



- Serve immediately.
