Mini Double Chocolate Cookies with Walnut

        MINI DOUBLE CHOCOLATE                    COOKIES WITH WALNUT






No one can resist a chocolate cookies, especially when it's in mini form!. These tender one bite mini chocolate cookies are so simple to make butter, sugar, eggs, flour, cocoa powder and I do add a little of coffee to really ample up the chocolate flavour. Then I add lots of chocolate chunks and walnut. Extra chunks of chocolate piercing through the cookie, melts away in your mouth makes them extra delicious and finally the sea salt finish really takes these cookies to the next level. My kids love them.

You only need one mixing bowl and a spoon. There's no mixer required and no chilling the dough. How simple can that be!

So, roll up your sleeves and let's get baking!





INGREDIENTS

- 8 ounce salted butter ( if using unsalted add 1/4 tsp salt)

- 6 ounce light brown sugar 

- 2 egg yolks ( lightly beaten)

- 2 tsp vanilla essence

- 1 tbsp instant coffee powder ( mix with 1 tbsp hot water)

- 12 ounce plain flour 

- 2 tbsp unsweetened cocoa powder

- 6 ounce roasted walnuts (chopped)

- 8 ounce chocolate chunks or chips ( semi sweet, bitter sweet or dark) I used dark 

- Extra chocolates chunks for topping

- Flaky sea salt for sprinkling ( optinal)


METHOD

- Pre heat oven to 170c

- Whisk together flour and cocoa powder. Set aside.




- In a mixing bowl, combine butter and sugar. Using a wooden spoon stir to combine until smooth and a bit fluffy.









- Whisk in egg yolks, vanilla essence and coffee mixture. Mix until well combined.









- Stir in dry ingrediants until they are combined. Fold in chocolate chunks and chopped walnuts. 









- Drop a teaspoon of the dough on a baking pan. ( It don't have to be a perfect shape) and gently press 3-4 pieces of chopped chocolate chunks into the tops of each cookies.






- Bake for 13 to 15 minutes until the tops are just set. These cookies may look slightly under baked, they'll keep baking on the pan as they cool. Keep your eyes on them, every oven is different so just be cautious with your first batch.

-Once out from the oven, sprinkle some sea salt if desired.

- Let the cookies to sit on the baking pan for 2 -3 minutes before removing to the cooking rack to cool completely.

- Store in a air tight container at room temperature.
