Stuffed Chicken Breast with Marinara Sauce

STUFFED CHICKEN BREAST                    WITH MARINARA SAUCE

This delicious stuffed chicken breast recipe is really easy to make. Tender and juicy on the inside with an amazing cheesy, broccoli and mushroom filling, covered with marinara sauce and topped with a generous amount of melted cheese for a complete and satisfying meal.

How to make Stuffed Chicken Breast with Marinara Sauce

- The chicken breasts are rubbed with
seasoning and pan seared on both sides.
You don't need to fully cook the chicken
since it will finish cooking in the sauce.

- Lightly secure openings of chicken breast
with toothpick so the filling stays secure.
Don't forget  to remove the toothpicks once    seared, it'll be more difficult to remove
them once the sauce is added.

- You can use home made marinara sauce or
your favorite store - bought marinara
  sauce.

- If you have large oven safe skillet, feel free
to use it instead of transferring the chicken
  onto a baking dish.

What to serve with:

- You can serve the dish with your favorite
sides. Salad, pasta, mash or steamed
vegetables. The choices is yours. I typically
serve mine with garlic bread and baked
  potatoes.

For stuffing

- I saute some broccoli, mince garlic,
  mushrooms and added shredded cheddar.

- You can use any type of mushrooms in this
recipe. I prefer brown mushrooms for
  richer flavor.

- Depending on what you have on hand,
feel free to switch up the stuffing.

Let's get start

INGREDIENTS

- 3 large chicken breast ( boneless and
  skinless)

- 1 tsp garlic powder

- 1 tsp paprika

- 2 cups marinara/pasta sauce. ( I used store
  bought)

- handful of cherry tomatoes

- 3 tbsp olive oil ( to saute)

- 3 slice mozerrela cheese.
  ( shredded works fine too)

- salt and pepper to taste

FOR STUFFING

-  3/4 cup chopped broccoli florets

-  1/2 cup mushrooms

- 1 Clove garlic ( mince)

- 1 cup shredded cheddar

METHOD

For the chicken stuffing

- Heat up skillet over medium heat. Add in
  garlic, chopped broccoli and mushroom.
Stir regularly and allow to cook. Season
with salt. Remove from the pan and set
  aside.

- Next, get your chicken ready for stuffing by
slicing the breast open with s sharp knife
( But not all the way through) so the two
sides lay flat but are still connected in the
  middle.

- Season both sides with garlic powder,
  paprika, salt and pepper.
  Spoon the stuffing mixture onto
the chicken breast, fold over the sides.
Securing the edges of the chicken with
  toothpicks. Repeat for the remaining
  chicken breast.

- Place a large deep pan over a medium
heat, add oil. Once the oil is hot
add the stuffed chicken and cook each
  side until golden brown.

- Pour marina sauce around the chicken and
spoon some of the sauce onto each breast.
Simmer it in the sauce until cooked
  through.

- While the chicken is simmering, pre heat
  oven to 200c

- Transfer the chicken to a baking dish then
top the cooked chicken breast with sliced
  mozerrela cheese, remaining of Cheddar
  and halved cherry tomatoes

- Baked in preheated oven for 10 to 15
minutes or until cheese is melted and
  sauce is bubbly.

- You can garnish your chicken with chopped
  parsley or fresh basil.

- Serve immediately with side dishes .

- Enjoy!
