These PEANUT BUTTER CHOCOLATE COOKIES take your cookies to the next level!
Made with brown butter, coffee, chocolate powder, peanut butter, chocolate chunks and chips and studded with chocolate. Its got everything you could ask for. With a texture that is slightly crispy on the outside and chewy on the inside it sure to please any cookie lover.

To make this cookies I am using brown butter. It is a plain butter that has been simmered on the stove top until brown. They are simply amazing with flavour. The nutty aroma is toxicating and add so much of dept in flavour. Simply melt the butter in low heat. Dont rush this process because it can be easily burnt if you aren't careful. Stir the butter frequently and keep a close eye on it.
Once the brown bits at the bottom start to form . Remove from heat and let it cool. Since you are using melted butter, you don't need a mixer for this recipe. Just stir up.

I use Skippy creamy peanut butter for this recipe. Avoid any natural peanut butter where the oil seperates. Any brand works well. 
 
I love to add loads of chocolates chunks and chips in my cookies. I enjoy having variety of texture and flavours to pair with the sweet peanut butter. I'm using bitter sweet chocolate chips and dark chocolate chunks.
As the cookies bake, the chips retain their shape while the chunks turns into oozing luxurious puddles. With that said, feel free to  use any chocolate you want whether dark, milk, white or even a flavored chocolate bar. For me, baking is all about delicious  outcome. Whatever ingredients you choose to get there are up to you.

Coffee powder + chocolate are match made in heaven. They really bring out the best of each other . The coffee deepens the chocolate flavor without overpowering the cookie crumb.
 
There is a a 1 hour chilling period in refrigerator which further improves the flavor and texture. After chilling let your dough to sit at room temperature for 10 minutes before rolling into balls . 1 tbsp of dough to make this cookies . Feel free to make the cookies smaller or bigger in size.

INGREDIENTS

- 1/4 cup granulated sugar

- 1/4 cup brown sugar

- 1/2 cup brown butter (melted)

- 1/2 cup smooth peanut Butter

- 1 egg

- 1 tsp vanilla essence

- 1 1/4 cup all purpose flour

- 1/2 tsp baking soda

- 6 oz dark chocolate chunks ( or your 
  preference)

- 2 oz bitter sweet chocolate chips

- 1 tbsp Cocoa powder

- 1 tsp coffee powder + 1 tsp hot water 


METHOD

- In a saucepan over low medium heat, melt 
  the butter until butter develops a nutty 
  aroma  and brown bits start to form at the 
  bottom, stiring often. Once the bits are 
  amber colour, remove from the heat. Pour
  into a bowl. Allow to cool for 20 minutes to
  room temperature. There will be little
  brown bits at the bottom of the pan. Don't 
  leave those behind. It carries a lot of 
  flavor.




-  In a mixing bowl. Sift in flour, baking  
   soda and chocolate powder. Set aside.

- Into the melted butter whisk together 
  peanut butter, coffee mixture, sugars until
  a paste has formed with no lumps. 

- Whisk in the egg and vanilla essence. 




- Stir in dry ingredients until they are 
  combine. Fold in chocolate chunks and
  chips until they are evenly dispersed.








- Cover the bowl with plastic wrap and let
   it rest in the refrigerator for an hour.
   

- Remove the chilled dough from the 
  refrigerator and let it to sit in room
  temperature for 10 minutes. 
  Meantime preheat oven to 170c.

- Onto cooking sheet, drop dough by rounded
  tablespoon 2 inch a part. Flattern the balls 
  with your palm to give a shape.




- Bake in preheated oven for 15 minutes
  ( Depending on your oven the cookies 
   might take less or more time to bake)

- Once the cookies are out from the oven
  press a few more chocolate chips /chunks
  on top of the cookies for looks, if desired.




- Allow to cool for 10 minutes before 
   transferring to a a wire rack to cool
   completely. Enjoy!
