Chicken Curry Fried Rice Curry spices infused in cooked rice with tender chicken and crisp vegetables. Simple Ingredients, easy steps and  yet a fullfilling dish  Any kind of rice will do to make fried rice. You can also replace it with brown rice or quinoa for a healthier version. I always cook mine in the rice cooker and thoroughly chilled . Freshly cooked rice will never work as you will end up with a soggy final product. I added long beans, carrot , bell pepper and potatoes . Feel free to use any vegetables you prefer.  Let's get cooking! Mocha Walnut Brownie Rich, chocolatey and dense brownies filled with roasted walnut for a decadent and delicious dessert. It was so easy to make and so fulfilling to eat. It's very addictive. Sadly they did not last long in my house. My kids gobbled them up as soon as they were out of the oven.  Coffee powder really makes a difference in this recipe. By adding coffee it enhances the flavor. It doesn't leave any trace of coffee but instead elevates the rich chocolatey flavour. These brownies are to die for. Let's bake!  Cheezy Potato Pancake  This dish comes together easily for a simple weekend brunch that's full of flavour and comfort for the soul.   It's comfort food to the MAX , with garlicky crispy crumbs on the outside whilst soft and cheesy on the inside. Topped with yoghurt  honey mustard sauce. So delicious! A huge hit with my  kids.   It's so easy to put this dish together.  First boil and mash the potatoes, I usually add some  sausages but you can choose not to add them. I  chop it all up and add them to the mix. Finishing the pancakes with gooey mozerrela cheese is just the perfect addition to them. For crunch,  i'm using conflakes and panko bread crumbs simply because I ran out of panko crumbs so I had to mix them both together. Add pounded garlic for extra flavour. Curry Laksa / Mee Curry There is nothing more satisfying then digging my chopsticks into a big bowl of  Curry Laksa . As a noodle lover, I could eat Curry Laksa  everyday, all day. The blend of spices and heat from the chilies together with the coconut milk make this dish creamy and delicious. My mouth is literally watering as I type this out. That's how much I love this dish. There are many version of Curry Laksa. You can use your favorite noodle in this recipe such as yellow noddle,  bee hoon ( rice vermicelli) wonton, pan mee, soba,  spaghetti or a combination of yellow noodles and bee hoon . For the broth,  I'm using knorr brand chicken cube ( no msg added). It helps to save prep time. But you can also make your own chicken stock from scratch . Either one will work.   Tofu Cutlet We love our tofu! I always try reducing our meat intake and strive to eat more plant based foods. It's a great source of protein and is low in fat. Tofu is easy to cook with and is an extremely versatile ingredient. I love that it has a very natural flavor and is great when paired with other ingredients and flavours. Today, Im making tofu cutlets. I have made many kinds of cutlets before ... but with tofu I've made plenty of mistakes.  Frequently  ending in soggy and floppy cutlets. Tofu has alot of moisture. Because of this, I squeeze the tofu in a muslin cloth to wring the extra water out. After the tofu has been wrung dry,  season by adding spices and vegetables if you prefer. Cooked in a rich coconut broth, with mild spiciness, aromatic herbs and a slight tanginess from lime juice.  Make it a dish to wish for!   Home Made Pizza This is  the  best and easiest recipe ever! Made this pizza recipe topped with a delicious, creamy homemade white sauce, barbecue grilled chicken and green bell peppers. And as it goes without saying.. tons and TONS of cheese. For a few weeks now I've, been trying to perfect homemade pizza but to no avail. The crust was too dry or it wasn't the right texture. The secret to a good homemade pizza is a pizza pan. Usually a pizza stone is used but I've opted for the pan which works just as fine. I got mine at a local bakery store but you can get it online as well.  Another big factor to a good pizza is the crust. You can spice up your crust by adding garlic powder or dried herbs. However, since my homemade sauce has garlic in it. I've kept my crust plain.  The white sauce, while it seams daunting is actually very simple.
