Mocha Walnut Brownie
Rich, chocolatey and dense brownies filled with roasted walnut for a decadent and delicious dessert.
It was so easy to make and so fulfilling to eat. It's very addictive. Sadly they did not last long in my house. My kids gobbled them up as soon as they were out of the oven.
Coffee powder really makes a difference in this recipe. By adding coffee it enhances the flavor. It doesn't leave any trace of coffee but instead elevates the rich chocolatey flavour. These brownies are to die for.
Let's bake!
Ingredients:
- 170g Dark chocolate chips
- 90g Butter
- 5 tbsp Cocoa powder
- 100g All purpose flour
- 1/4 tsp Baking powder
- 1 tbsp Coffee powder
- 2 Eggs
- 1 Egg yolk
- 1/2 cup walnut ( roasted and coarsely)
(chopped)
- 150g sugar
- 1tsp vanilla essence / extract
- Sea salt to sprinkle
Method:
: Preheat oven to 170c .
: Cover the bottom and sides of a 8 to 9 inch
square baking pan with parchment paper on all sides, leaving some overhang
to easily lift the brownies out of the
pan once baked.
: Sift flour and baking powder in a mixing
bowl. Set aside
: Melt chocolate chips, butter, cocoa powder
and coffee powder in a double boiler over
simmering water until melted. Remove
from the heat.
: With a hand mixer beat eggs and vanilla
essence/ extract until combine.
: Add sugar and continue beating until well
incorporated.
: Add flour and baking powder, fold it all
together with a wooden spoon or spatula.
: Mix in coarsely chopped walnuts.
: Pour the better into the baking pan
: Bake for 20 minutes or until a toothpick
comes out with moist crumbs clinging.
Keep your eyes on the oven. All ovens vary so know your oven.
: Sprinkle with flakes of sea salt.
: Once cool cut into squares and enjoy!
