Curry Laksa / Mee Curry There is nothing more satisfying then digging my chopsticks into a big bowl of  Curry Laksa . As a noodle lover, I could eat Curry Laksa  everyday, all day. The blend of spices and heat from the chilies together with the coconut milk make this dish creamy and delicious. My mouth is literally watering as I type this out. That's how much I love this dish. There are many version of Curry Laksa. You can use your favorite noodle in this recipe such as yellow noddle,  bee hoon ( rice vermicelli) wonton, pan mee, soba,  spaghetti or a combination of yellow noodles and bee hoon . For the broth,  I'm using knorr brand chicken cube ( no msg added). It helps to save prep time. But you can also make your own chicken stock from scratch . Either one will work.   Tofu Cutlet We love our tofu! I always try reducing our meat intake and strive to eat more plant based foods. It's a great source of protein and is low in fat. Tofu is easy to cook with and is an extremely versatile ingredient. I love that it has a very natural flavor and is great when paired with other ingredients and flavours. Today, Im making tofu cutlets. I have made many kinds of cutlets before ... but with tofu I've made plenty of mistakes.  Frequently  ending in soggy and floppy cutlets. Tofu has alot of moisture. Because of this, I squeeze the tofu in a muslin cloth to wring the extra water out. After the tofu has been wrung dry,  season by adding spices and vegetables if you prefer. I sprinkle some salt onto my cutlets after frying . The salt adheres to the fried food and leaves a pleasant flavour.  Let's get started! Cooked in a rich coconut broth, with mild spiciness, aromatic herbs and a slight tanginess from lime juice.  Make it a dish to wish for!   Home Made Pizza This is  the  best and easiest recipe ever! Made this pizza recipe topped with a delicious, creamy homemade white sauce, barbecue grilled chicken and green bell peppers. And as it goes without saying.. tons and TONS of cheese. For a few weeks now I've, been trying to perfect homemade pizza but to no avail. The crust was too dry or it wasn't the right texture. The secret to a good homemade pizza is a pizza pan. Usually a pizza stone is used but I've opted for the pan which works just as fine. I got mine at a local bakery store but you can get it online as well.  Another big factor to a good pizza is the crust. You can spice up your crust by adding garlic powder or dried herbs. Red Velvet  Cupcake My daughter requested for this cupcake. To be honest, I was never a huge fan of red velvet cakes. The store bought ones were ultra dry and the flavor confused me.  But not going to lie, I ate two of these cupcakes for tea. Regret? No.  Delicious? Yes. The cupcakes were soft and light. The cream cheese filling in the centre lends to the moisture and richness of the cupcakes. These cupcakes can be eaten plain without the frosting. Its an individual preference. The base of this recipe are simple ingredients. Most of which you probably have in your pantry.  Cake flour is used in this recipe. It's a delicate flour with a low protein content. It makes the cake super tender . It's a clear path to a lovely soft cakes. You can use a combination of 160g all purpose flour and 32g of cornstarch to substitute cake flour.     Bagels There is something simply satisfying about waking up in the morning to freshly baked bagels. These bagels are chewy and slightly crunchy crust. The cool slow rise enhances the flavor and texture of the bagels Usually bagels are poached in  boiling water that has been sweetened with malt syrup. I'm using honey as a substitute. Baking soda is also added, it makes the bagels shinnier after they are baked. Add any topping you prefer or leave it plain. There are endless flavor option with one recipe. Let's get baking! I had made these tarts numerous times before and it is a family favorite.  Its super easy to make. Buttery and tender shells, filled with rich chocolate filling and a creamy cream cheese mixture and it taste better the next day. It's a must try! So let's bake!
