Orange Chocolate Chips Muffin

 ORANGE CHOCOLATE CHIPS                        MUFFINS



These homemade muffins are quick to make and are not very sweet. They truly make the perfect snack or great for breakfast. Kids will love them! Fresh orange juice and zest in the better gives these orange muffins a sweet and aromatic orange zing and by adding chocolate chips make everything better! When fresh, these muffins have a subtle taste, the orange flavour will be stronger after a day. 


HOW TO MAKE ORANGE CHOCOLATE CHIPS MUFFINS

- For assertive orange flavour that shines      beautifully into the muffins. I'm using both  the zest and juice of the fresh orange and  adding a tiny bit of lemon zest. Orange zest  alone yields sort of flat citric note, while lemon brightness the flavours up without making the muffin taste lemony. When zesting your fruit avoid white layer which taste very bitter. If you want a stronger orange flavour, increase the orange juice and reduce the milk.



- You can use oil instead of butter, which will make the muffins even more moist and fluffy but the muffins will lack of flavour. I prefer using butter as it adds rich and buttery  muffins. 

- I only used 100g granulated sugar for this recipe because the chocolate chips are already sweet. You can use any types of chocolate chips such as milk chocolate or white chocolate or chocolate chunks if you prefer.

- You can customize the muffins to your liking by adding dried cranberries, fresh berries, raisins, chopped nuts, toasted coconut or streusel topping by mixing 1/2 cup all purpose flour, 1/4 cup brown sugar, 1/4 tsp cinnamon powder and 1/4 cup melted butter. Scoop the streusel over the top of your muffins and bake. You can omit the chocolate chips if you prefer a basic orange muffins.

- Lastly, the muffins mixing method requires that wet ingredient be added to the dry ingredients.  I use one bowl for wet ingredient and 1 bowl for dry ingredient before the two are added to each other. Do not over mix, over mixing will result tough muffins.

INGREDIENTS

- 100g granulated sugar

- 250g all purpose flour ( sifted)

- 75g melted salted  butter and cooled

- 2 1/2 tsp baking powder

- 2 eggs

- 1/4 cup yogart

- 1/4 cup whole milk

- 1/2 cup freshly squeezed orange juice

- 1/2 tsp vanilla essence

- 1 1/4cup chocolate chips

- zest of 1 orange

- 1/2 tsp lemon zest ( optinal but recommended)


METHOD

- Pre heat over to 170c . Line muffin pan with paper liners.

- Mix the dry ingredients : Whisk all purpose flour and baking powder. Set aside

- Mix the wet ingredients :  Whisk eggs, granulated sugar, melted butter, yogart, orange juice, vanilla essence along with 2 zests. 

- Pour half of the wet ingredients into the dry ingredients then half of the milk. Fold with a wooden spoon. Repeat with remaining wet ingredients and milk. Mix until just combine. Do not over mix. Fold in 1 cup of chocolate chips until distributed. 



- Fill the paper liners muffin cups all the way up.  Sprinkle the remaining 1/4 cup chocolate chips on top of the muffins.



- Bake until the muffins are golden brown and toothpick inserted comes out clean about 18 to 20 minutes. ( Depending on your oven the muffins might take more or less time to bake. Good to check to avoid dry muffins. )
