Spaghetti with Grilled Salmon and butterlime garlic sauce

Chilli Oil Spaghetti with Grilled Salmon 
and 
ButterLime Garlic Sauce



This is an easy spaghetti recipe which takes  a few minutes to prep. It's a family favourite dish and is always requested by the kids and my husband.

This spaghetti is Al-a Aglio e Olio which is so so easy to make. You wont have to make your sauce from scratch and wont have to use any of those bottleded sauces. Its also infused with chilli oil which brings the heat while keeping it tolerable for most people. Most importantly it's a budget friendly dish using simple pantry ingrediants. Here's how I made it.

Ingredients

•300g spaghetti 

•5  cloves garlic(minced)

•2 tbsp chilli oil

•100g broccoli

•100g cherry tomatoes

•100g shiitake mushrooms (any kind will do)

•salt and pepper to taste

•lemon(a squeeze)

•4 steaks of salmon

Lime and garlic butter sauce

•4 tbsp butter

•2 cloves garlic(smashed)

•1 tbsp chopped dill 

•1 tsp lime juice

•salt and pepper to taste


To prepare pasta:

1. In a large pot filled with water add one tbsp of salt. Bring to boil

2. Add in pasta and cook according to instructions.




3. Once cooked add broccoli and drain.



 4. In a pan, add chilli oil, minced garlic, mushroom,tomatoes and broccoli until fragrant.



 5. Add cooked pasta, and toss to combine.




6 . Add a squeeze of lemon juice. Season with salt and pepper. 




To prepare butter sauce:

1. In a small saucepan add butter and crushed garlic. Simmer gently over low heat until fragrant.




2. Add chopped dill and remove from the heat. Pour in lime juice. Season with salt and pepper.( if using salted butter, omit salt)




To prepare salmon:

1. Marinate salmon with 1/3 of butter garlic sauce and leave for 15 minutes(refrigerated)



2.  Grill the marinated fish on a hot grilling pan till done. 


3. Top each mound of pasta with a piece of salmon. Drizzle generously with garlic butter sauce.

4. Serve immediately
