Chicken Parm

CHICKEN PARM WITH AVACADO SALAD





When running out of options of what to feed my family, chicken parm always comes into my mind. The crispy, succulent chicken breast with so much melty cheezyness! This dish is one of the most loved by my family.

Chicken parm is so easy to make,looks gourmet on the plate, and is a big hit with both kids and adults. Serve it with sides of your favourite dish.
 
This is my version of Chicken Parm

Ingrediants:

•2 cup corn flakes(for a crustier coating)
[Breadcrumbs and panko can also be used]

•1/4 cup parmesan

•5 sprigs of fresh thyme

•1/4 cup all purpose flour( lightly seasoned with salt)

•1 egg (beaten)

•zest of 1 medium sized lemon 

•1 cup pasta sauce

•1 cup grated mozzarella cheese

•1/2 tsp garlic powder

•1/4 tsp paprika/chilli powder

•salt and pepper to taste

•3 skinless chicken breast(pounded thin)


Salad:

•1 avocado 

•30 g cherry tomatoes

•1 small onion

•a squeeze of lemon

•salt to taste


To prepare salad:

1. Dice avacado,cherry tomatoes, and onion.

2. Season with a squeeze of lemon and salt 





To prepare chicken:


1. Marinate the chicken breasts with garlic powder, paprika and salt. Referigate for an hour.

2. In a food processor pulse together cornflakes,thyme, lemon zest, and parmesan until course crumbs form



3. Pour the mixture into a plate. 

4. Dredge each breast in the flour and tap off excess flour. 



5. Dip in the egg. Hold the chicken over the liquid to let any excess fall back into the bowl.




6. Dredge both sides in the crumbs and set aside.




7. Heat a large skillet over medium heat. Add oil and lay chicken breast gently into the pan. Fry until crispy and cooked through.




8. Place chicken on prepared baking tray/casserole dish. Top each breast with sauce and mozzarella cheese.






9. Bake for 10 minutes or until cheese is melted

10. Serve with avocado salad.
